Kamut is a great grain!

I tried kamut for the first time a month ago, and I love it! I think it's much better than red, white or spelt wheat berries. It has a thicker hull and more fiber, it's chewier. It has the same great taste as the other berries. And when I boil it and the berry splits, none of the starch dissolves like the others somewhat did (maybe I boiled them too long). Its harder to cook though. I soak the grains for at least 12 hours, and I boil it for well over an hour. Apparently, the hull is very thick. But it's a great grain, and now I'm looking for more recipes where I can substitute it for pasta, rice, potatoes, etc.

The au naturel has 7 gm of sugar per 1/4 cup--it's just barely sweet and I love it! It's delicious!

Corn Flour is Delicious!

I made pancakes with corn flour and sweet rice flour instead of corn meal and wheat flour, and they were great! The recipe was from The Roasted Root, and you can find it by googling: gluten free corn flour pancakes. I don't know if we're allowed to post URL's. The flour has a finer grind than corn meal, and I think it has a better corn flavor. It was a very nice change from wheat.

Whole Grain Oatmeal is Delicious!

I had never eaten oat groats before trying Bob's Red Mill, and now I'm so glad I did. They're so much better than rolled oats. You can't even compare them. They have more flavor plus a great chewy texture. They take much longer to cook--50 minutes for the groats and 5 minutes for rolled --but I think they're worth it. I make big batches to last several days, and then they don't seem like more work.
