I use this as a substitute for part of wheat flour, as it has much more fiber and is gluten free. Barb

Has a great flavor and you use surprisingly little in bked goods as it absorbs sooo much liquids- hard to find recipes using it but I made some Coconut Bread last night that is deeelicious and made coconut pancakes last weekend!
