When you grind it, things doesn't come in the form of fine powder or something.
It is basically a thin flake that can't be blended well in foods or batter.
Since it has big dimension with less surface, you have to use a lot more than just powder.
I innocently wanted a cup of cinnamon latte one night and had to literally used 1/5 of the jar to make it smell like cinammon-y enough.
