one cup of quinoa for 4 people
Rinse the quinoa thoroughly and drain. Add one cup of quinoa to 1-1/2 cups of water in a saucepan. Bring to a boil, then reduce heat and let simmer until all water has evaporated. Fluff with a fork.
For a more defined texture, sauté the quinoa in a tablespoon of Alter Eco Olive Oil before adding water and cooking...voilà a pilaf!
